The best advice I could give you is to use photos in your designs. Not just as items on the page but in headers etc. The biggest mistake most people make is to have large expanses of colour as navigational elements. Take a look at the big sites. WT has some strange white graphic in the background of its header... CNET has gradients in its yellow, Dell have text on their header...
Which brings me on to another point: look at big and popular sites and see what techniques they use. Go on to Template Monster and look through the templates there. You'll see some excellent design and you can (by looking through a lot of them) see what features make a design look good.
How about posting a design in the Site Review forum. Then we can all see what stage you are at and can give some pointers to improve that design.
