I manage a large very popular food website - Owner of the site was just contacted by a large and equally popular wine site.... Wine site wants to link to the food site and pay for the 'material' on the site....

I have no idea how much to charge for this?? Charge by the hit? month?

Any suggestions would be most appreciated.

i would charge by the month just to keep it easy. You can also track you trade traffic with a program I like to use called phpadsnew. Its a free banner tracking system i found on hotscripts.com
