Ok, going a little deeper than you probably want, have an IP lawyer create your policies. What your going to get here is opinion and not to be taken as legal counsel.
First thing a disclaimer is going to do is set your intentions apart from your policies. You'll want to inform your visitors of the relationship between your site and the content owners. (e.g. This site is not affiliated....) Then you'll need to add what is expected when visiting the site as far as it's use.
A copyright policy is where you should add your sources. Statements for example, this site's content is copyright to (your name) unless otherwise noted (with your list of quoted sources) You can format it like a list if you want:
1. Such and such article used with permission from....
2. Racing statistics provided by...
3. Race driver biography quoted from...
You get the idea. I'd have to add, I assume or at least I hope you'll be seeking permission to use what you take or know the limits of your quotes and their usage. One step to gaining this knowledge is to find any policies from the quoted/content supplied websites to see how their content can be used. A disclaimer MAY help you cover yourself, but will NOT stop you from being sued.
