OK firstly we need to define subdomains and addon domains.
Subdomains use the main domain, but have a prefix also. For example, maps.google.com or search.yahoo.com or something. These are subdomains, where the main domain is google.com or yahoo.com.
Addon domains are a feature in cPanel that allow you to host multiple sites on the same account. For example, you might own a blog and also have a company website - cPanel would allow you to host both of these on the same account.
Find the relevant option in cPanel under domains (subdomains if that's what you want or addon domains if you want to use a different domain entirely). Fill in the relevant details such as the FTP username for the sub/addon domain, the password and the area inside your account that you want the files stored for this domain.
If you are using an addon domain, be sure to change the nameservers for that domain to your hosts nameservers.
I hope this answers your question,
Dan
