What terms might not be popular on a search engine, might be popular searches in a directory.
Some directories keep track of queries on their db while others do not. Personally, on my own directory -- we keep track of ours and have 5 years worth of queries in our db. So, we have a pretty good idea of what gets looked for and what doesn't (with regard to our own directory).
Make sure the company submitting your site, at least follows the proper submission format (if one is provided). No editor wants to get a submission where everything is in caps and the description is overly promotional.
If you write a description that follows the basic format of what you see in the directory being submitted to, chances are most of your description will be OK and require very little editing.
In my own directory though, our editors always rewrite the description because then it's unique. If the same site owner submits to lots of directories and uses the same wording and none of the directories change it, we all end up with duplicate content.
