All spiderable links count as backlinks, Some have more weight that others, But they are all backlinks.

The only way to know what the anchor text is is to visit the site linking to you and have a look.

You can't find all the links to your site using Google never mind the anchor text

I think Yahoo will give you the most accurate count of backlinks though even then it won't be all of them. You can use the same link: search at Yahoo, but you'll need to add the http:// in the url.

And like Chris and stOx already mentioned you won't be able to find the anchor text of the links through the search engines.
