Hey micahsc, you have a good point there which I agree with to a good degree. But I think you are missing some reasons why good SEOs might want to work for someone else:
altruism - it feels good when you get someone's site up the rankings and you see the smile on their face when they see their traffic statistics
company and fun - working as an SEO on your own stuff from home can be very lonely - it's nice to have company and talk to people. Proposing ideas to a client which can be a very creative and positive meeting - look out - I'm suggesting that work can be fun
respect - an SEO can quietly work on marketing their own blackhat sites without telling their grandmothers their URLs but you can be proud to say "hey, I ranked XXX for YYY" and garner respect from your peers
interesting challenges - I would never have thought about trying to rank for "XYZ competitive widgets" and who's in that market. This is a really interesting challenge and I'm delighted to learn more about XYZ widgets.
I'm sure there's a load more reasons why someone might want to SEO for others, but that'll do for now

I agree and disagree. Definitely, you should learn yourself - it will be useful to have a decent understanding of the process and it will help you in your work in future.
I disagree that you should not then get a specialised SEO to work for you. Why? Time and resources. Your time is probably better spent working on your ideas and business and outsourcing SEO might well be a better investment. Things like link building can be extremely time consuming and you can bet that a good SEO is going to be more efficient about it.
