My stats show people are on the Internet at work as much as they are at home. My stats peak at the beginning and end half hour of the traditional work day, and around traditional coffee break times and lunch hours, especially on Fridays. During good weather in the summers weekend days are the worst, altho that isn't true in the winter when there's not as much to do outdoors.
People at home seem to be on my sites the most after dinner, from 7-9, then tapering off drastically after 11pm. Then the people that are on at night and the early risers peak again from 3am to 6am. In general I get the most traffic on Wednesdays, so that's when I send my newsletters, but then maybe that's why I have more traffic on Wednesdays. The fluctuation by hour is drastic but traffic variations by day on my sites isn't all that significant except summer weekends.
I miss all the noon launches, which are 9am my time, because I sleep mornings and work on my sites at night. But I do sometimes go listen or read later if a transcript of something like a missed teleconference is offered. But I think because of time differences and differences in different people's schedules, whenever you launch you are going to miss some part of your audience.
