You don't have to set channels, But it will help you see what sites or pages are performing better.

I have a channel for my directory, My forum, My blogs and for the WT adsense sharing program. Then i can go into adsense and see how many impressions and clicks each channel has got and i can see earnings for each channel.

If i didn't have the channels i would have no way of knowing which adverts were performing and which are a waste of space.

you can set up 2 kinds of channels.

url channel, which associate with a particular page/url of your site.

custom channel, which you can set it to associate witha particular ad block (on 1 page or multiple pages). Thus, if you need more detailed stats, you can use custom channels.
