Adsense is dependent on many factors.
1) Time of day
I find that many advertisers are on a budget. Therefore, those reaching for higher positions with more views are generally paying more for placement. If they are on a daily budget, you will find that revenue drops late in the day.
2) Day of week
I find that my site (one in particular) does have more traffic during the latter half of the week but lower on weekends. This could be due to less people visiting my site on weekends.
3) Placement of Your Website / PageRank
Sometimes Google searches will return your site higher/lower depending on various factors that only Google will ever know. But sometimes your keywords will be better used by some other sites and you drop lower.
4) Click Throughs
Sometimes people will actually enjoy your site and want to stay there. Adsense promotes people disinterested in your site to click. So, it is a balancing act as to whether you want people to leave. Some days many are just exploring and surfing away. Sometimes a high Bounce Rate is good (at least for a brief period) for your Adsense account. LOL.
5) Ad Placement
Sometimes the Ads pushed out to your site may be fairly consistent. Returning visitors that see the same ads every day will not be inclined to click on ads they have already seen and visited.
6) Market
It is a well know fact that the hot niches pay more than the not so exciting ones.
