when you sign up for google adsense they do not ask you to fill your birthday... so how they know if you are at least 18 years old ?

It`s not important. If your age under 18 years old you cant open a bank account

So yo cant take the money

I had a my "own" bank account when I was sixteen. My mom cosigned, but the debit card and bank statements were in my name.
