Using zoneedit.com, am I doing this right?

So, recently I signed up and got an account at zoneedit.com. I immediately added a zone. This is what it brought up for the nameservers:

ns18.zoneedit.com 72.9.106.68
ns9.zoneedit.com 66.240.231.42

Then in my 1and1 control panel, I went to my domain, and set the first nameserver to ns18.zoneedit.com, and the 2nd to ns9.zoneedit.com. Now, five days later, I added my IP by editing the zone I set-up for my domain at zoneedit.com. I want the domain to be hosted locally off of my Apache server.

Did I do this correctly? How long do I have to wait for the nameservers to update? How long do I wait for the IP Address I just entered? Why does it suggest I add extra nameservers for my important domains?

Edit: I set-up a web proxy on another one of my 1and1 domains. How come it shows my Apache server at my domain when I can't? Is this because the nameservers are hosted by them and the process is sped up, even though I JUST entered my IP at zoneedit.com?
