I think one hyphen in a name is okay if the two keywords you're using are perfect for the domain you wish to develop. Other than that I would try and stay away from them.

Domains with multiple hyphens in them are not good for the developer or the traffic/customer that has to remember to use the hyphens when they want to come back. They are however great for the registrars who profit nicely when people insist on registering them.

I'm often too lazy to type a hypen or two, much less to remember it. But if the website had important information that I'd like to check, I won't mind typing multiple hyphens. Good content has more weight than hyphenated domain (but only to some).
