PHP - is most common for what your trying to do i would think
You should look into your web host and see if they
provide you with a basic CGI feedback Form.
I know the web host I use - 1 and 1 - offers this in their
back office, and its a very simple set up.
Although you have to use the form like another page on
your site (i.e. you click the contact link and it "opens up
a new window" to the contact form), i think this would
be a easy way to accomplish your goal.
