Javascript would be a bit useless cos it's client side.
If you use ASP.NET you can use its in-built graphics functions to create a dynamic image.
There's also a few scripts out there that do the whole e-mail hiding thing for you - but be carefull, some say they 'encrypt your e-mail address so spam bots can't read it' when all they're doing is encoding it (there's a big difference...) and these days spam bots have no problem decoding Base64 and even some of the more complex methods.
