Has anyone used clickbank from a publisher's perspective? What were your experiences like? How quick and reliable are they to pay? What was the charge back process like?

Payment is the same for affiliates and publishers. CB is good with payments. As for refunds and chargebacks I think they deduct the amount from your account. There might be a fee for chargebacks, but I don't have experience with that yet.
