Get the Photoshop User magazine. Its great and I think they're putting out a special issue for cs3. Even better, if you join the NAPP (got to http://www.photoshopuser.com/), you have access to a photoshop forum and tons of great online tutorial videos.
EDIT: I just noticed that they have a whole CS3 learning center... Wow!
