ok so here is my problem though. When I take my header and load it into photoshop, I edit my text and whatever and then when I pick save to web, I can choose the quality. When I put it at high it looks good, but then at medium you start seeing the text box outlines and the letters start to get fuzzy.

Is there any good way to optimize it so it does not do this?

Chris when I reduced the quality to 30 (same as a medium jpg) I didn't see any blurriness. I had to get down lower than 25 before I even began to notice the quality loss. At 30 though the image is reduced to about 23kb which is a pretty big reduction in size.

Try saving the image at 30 and then uploading it to the server. Keep a copy of the high quality image in case you want to put it back. View the image through your browser before making a decision about it since that's how everyone else will see it.

Ok I will try that. It just seemed to be bad when I looked at it. I will try it later and then maybe get some opinion of how it looks. Thanks
