Turn off anti-aliasing on your text. The reason its there is because your text edges has slight transparency on it. You'll have a couple pixels that have, for example, 50% opacity. GIFs don't recognize an partial transparency like that, it's either completely transparent or not transparent. So thats how you get the white pixels. Turning off anti-aliasing will keep the text from being "blurred" like that and therefore get rid of the white pixels.
