Two ways...
Create a new layer, merge the new layer and the shape layer w/stroke then cut the new layer in half. Disadvantage of this is that you lose the effects settings - sometimes not a big deal if you know what you're doing.
otherwise if you want to keep the style settings then make your shape a SMART OBJECT (right click on layer and convert) then apply a layer mask and fill in the area you want to hide so that way, you retain style settings so should you want to add additional thickness to the stroke or change colour, you just double click on the smart object icon which will take you to the root file and you can just change the settings from there.
