How are you creating / working with the text? Are you saving a jpeg / gif / png?
The regular text tool creates a new layer, and leaves it visible by default. If you use save for web or device it will automatically flatten the layers for you; save as will ask what you want to do with layers. You might be saving only the background layer? |

My bet is that you should check what mode it's in. If it's a .gif in index mode you can't save changes to it. You have to change it to RGB color for web, or CMYK color for print.
